Ingredients
4 medium sweet potatoes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt to taste
Pepper to taste
4 tablespoons butter
Fresh parsley, for garnish
Sour cream, for serving
Method
1. Preheat the oven to 220°C (425°F).
2. Wash and dry the sweet potatoes. Slice each potato thinly, about 1 cm apart, but do not cut all the way through.
3. Place the potatoes on a baking tray. Drizzle olive oil over them. Sprinkle garlic powder, paprika, salt, and pepper evenly.
4. Add small pieces of butter between the slices of each potato.
5. Bake for 45-50 minutes or until tender. Garnish with chopped parsley and serve with sour cream.
