Ingredients
– 4 medium potatoes
– 60 ml olive oil
– 1 tsp sea salt
– 1 tsp black pepper
– 3 cloves garlic, minced
– 1 tsp fresh rosemary, chopped
– 1 tsp fresh thyme, chopped
– 60 g cheese, grated
– 30 g butter
– Fresh parsley, for garnish
Method
1. Preheat the oven to 220°C. Wash the potatoes and dry them with a towel.
2. Slice the potatoes evenly, making cuts about 5 mm apart. Do not cut all the way through.
3. Place the potatoes on a baking tray. Drizzle olive oil over them and sprinkle with salt and pepper.
4. Mix the minced garlic, rosemary, and thyme. Spread this mixture between the slices of the potatoes.
5. Bake for 45-50 minutes, until they are crispy. In the last 5 minutes, sprinkle cheese and dot with butter.
