Ingredients
– 1 cup couscous
– 1 cup vegetable broth
– 1 cup cooked pumpkin, diced
– 1 cup spinach, chopped
– 1 medium red bell pepper, diced
– 1/2 cup dried cranberries
– 1/2 cup feta cheese, crumbled
– 1/4 cup walnuts, chopped
– 2 tablespoons olive oil
– 1 tablespoon apple cider vinegar
Method
1. Boil the vegetable broth in a pot.
2. Once boiling, add the couscous, then cover the pot and remove it from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid.
3. Fluff the couscous with a fork and mix in the diced pumpkin, chopped spinach, and red bell pepper.
4. Stir in the cranberries, feta cheese, and walnuts. Drizzle olive oil and apple cider vinegar over the mixture and mix well.
5. Serve the salad chilled or at room temperature.
