Ingredients
1 cup couscous
1 1/4 cups water
2 tablespoons olive oil
2 tablespoons harissa paste
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup feta cheese, crumbled
1/4 cup parsley, chopped
Salt to taste
Pepper to taste
Method
1. Start by boiling the water in a pot. Pour in the couscous once the water is bubbling.
2. Stir in the olive oil and harissa paste. Cover the pot and remove it from heat. Let it sit for about 5 minutes.
3. Fluff the couscous with a fork to separate the grains.
4. Mix in the tomatoes, cucumber, feta cheese, and parsley. Season with salt and pepper.
5. Serve warm or chilled, enjoying your flavorful dish.
