Ingredients
- 1 packet of yellow cake mix (approximately 500g)
- 1 cup of water (250ml)
- 1/2 cup of vegetable oil (125ml)
- 3 large eggs
- 1 cup of sweetened shredded coconut (about 100g)
- 1 can of coconut cream (400ml)
- 1 cup of powdered sugar (approximately 120g)
- 1 teaspoon of vanilla extract
- 1/2 cup of unsweetened shredded coconut (about 50g)
Method
1. Preheat your oven to 180°C. Grease and flour a baking pan.
2. In a large bowl, combine the cake mix, water, vegetable oil, and eggs. Mix until smooth.
3. Stir in the sweetened shredded coconut, then pour the batter into the prepared pan.
4. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
5. While the cake cools, mix together coconut cream, powdered sugar, vanilla extract, and unsweetened shredded coconut. Frost the cooled cake.
