– 2 medium zucchini

– ¼ cup fresh parsley (chopped)
– ½ cup cherry tomatoes (halved)
– ½ cup feta cheese (crumbled)

Method

1. Start by preheating your grill or pan over medium heat.
2. Slice the zucchini into 1 cm thick rounds.
3. In a bowl, mix together olive oil, salt, pepper, and garlic powder.
4. Coat the zucchini slices with the oil mixture then place them on the grill. Cook each side for about 3-4 minutes until grill marks appear.
