Grilled Paneer Mint Salad Recipe with Pickled Onions and Pomegranates
Ingredients
250g paneer, cut into cubes
1 medium red onion, thinly sliced
100ml apple cider vinegar
1 tablespoon sugar
1 tablespoon salt
100g pomegranate seeds
1 cup fresh mint leaves, chopped
2 cups mixed salad greens
2 tablespoons olive oil
Black pepper to taste
Method
1. Begin by preparing the pickled onions. Mix together the apple cider vinegar, sugar, and salt in a bowl.
2. Add the thinly sliced red onion to the bowl. Let it sit for about 30 minutes so the onions pickle.
3. While the onions are pickling, heat a grill pan over medium-high heat and grill the paneer cubes until golden brown on all sides, around 8 minutes.
4. Take the grilled paneer off the heat and combine it with the salad greens, chopped mint leaves, and pomegranate seeds in a large bowl.
5. Drizzle olive oil over the salad, toss gently, and season with black pepper. Serve with the pickled onions on top.
