Ingredients
– 250g halloumi cheese
– 1 red bell pepper
– 1 yellow bell pepper
– 8 slices sourdough bread
– 200ml hummus
– 2 tablespoons olive oil
– 1 teaspoon dried oregano
– Salt, to taste
– Black pepper, to taste
– Fresh parsley (optional)
Method
1. Cut the halloumi into thick slices.
2. Slice the red and yellow peppers into strips.
3. Heat olive oil in a grill pan over medium heat and cook the halloumi for 2–3 minutes on each side until golden brown.
4. In the same pan, grill the pepper strips until they are soft, about 5 minutes.
5. Toast the sourdough slices, spread hummus on each piece, top with halloumi, grilled peppers, and season with oregano, salt, pepper, and parsley if desired.
