Ingredients
– 2 large eggplants
– 60 ml olive oil
– 2 teaspoons garlic powder
– 1 teaspoon smoked paprika
– Salt, to taste
– Pepper, to taste
– 240 ml barbecue sauce
– Fresh parsley, for garnish
Method
1. Slice the eggplants into 1 cm thick rounds and place them in a large bowl.
2. Pour olive oil over the eggplant slices and sprinkle garlic powder, smoked paprika, salt, and pepper. Toss everything until the slices are evenly coated.
3. Preheat the grill to a medium-high heat. Once ready, arrange the eggplant slices on the grill.
4. Grill the eggplant for about 4-5 minutes on each side until they become tender and have nice char marks.
5. Brush barbecue sauce over the eggplants during the last minute of grilling. Remove them from the heat and garnish with fresh parsley.
