Delicious Grilled Eggplant Recipe: Easy & Flavorful Summer Dish

Ingredients

– 2 medium eggplants
– 60 ml olive oil
– 2 cloves garlic, minced
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon dried oregano
– 1 tablespoon balsamic vinegar
– 300 g cherry tomatoes, halved
– 60 g feta cheese, crumbled (optional)
– Fresh basil leaves for garnish

Method

1. Start by preheating the grill to medium heat.
2. Slice the eggplants into 1 cm thick rounds and place them into a bowl.
3. Mix olive oil, minced garlic, salt, pepper, dried oregano, and balsamic vinegar together. Pour this mixture over the eggplant slices and toss to coat them well.
4. Grill the eggplants for about 5-7 minutes on each side until they are tender and have nice grill marks.
5. Once cooked, top the grilled eggplant with cherry tomatoes and feta cheese. Garnish with fresh basil leaves before serving.
