Ingredients
1 medium pineapple, peeled and cut into rings
2 peaches, halved and pitted
2 nectarines, halved and pitted
2 cups strawberries, hulled
2 tablespoons honey
2 tablespoons olive oil
1 teaspoon vanilla extract
1 lime, juiced
Fresh mint leaves, for garnish
Method
Heat a griddle or a frying pan over medium-high heat.
Brush the griddle with olive oil to prevent sticking.
Place the pineapple, peaches, and nectarines on the hot griddle.
Cook them for about 2-3 minutes on each side until they have grill marks.
Remove from heat, then combine the fruit with strawberries in a large bowl. Drizzle honey, lime juice, and vanilla extract on top, and mix gently.
