Ingredients
– 300 g green beans, trimmed
– 1 red onion, finely chopped
– 1 tomato, diced
– 1 bell pepper, chopped
– 2 tbsp olive oil
– 1 lemon, juiced
– 1 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp dried oregano
Method
1. Begin by boiling water in a pot. Add the green beans and cook for about 5 minutes until they are bright green and tender-crisp.
2. Drain the beans and immediately place them in a bowl of cold water to stop cooking.
3. In a large mixing bowl, combine the red onion, tomato, and bell pepper.
4. Add the cooled green beans to the bowl along with olive oil, lemon juice, salt, black pepper, and oregano.
5. Toss everything together until well mixed. Serve fresh or chilled.
