Ingredients

– 500 g green beans, trimmed
– 1 cup onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon ginger, grated
– 1 tablespoon curry powder
– 1 can (400 ml) coconut milk
– 1 cup diced tomatoes (canned or fresh)
– 2 tablespoons oil
– Salt, to taste
– Fresh cilantro, for garnish

Method

1. Heat oil in a large pan over medium heat. Add onions and cook until they become soft and translucent.
2. Stir in the garlic and ginger, cooking for about one minute until fragrant.
3. Mix in the curry powder and cook for another minute, allowing the spices to bloom.
4. Pour in the coconut milk and diced tomatoes. Add green beans and stir everything well.
5. Simmer the curry for around 15 minutes until the beans are tender. Season with salt. Garnish with fresh cilantro before serving.
