  • 1 kg potatoes
  • 60 ml olive oil
  • 240 ml vegetable stock
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh lemon juice
  • 1 lemon, sliced
  • Fresh parsley for garnish

Method

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cut the potatoes into wedges, then place them in a large baking dish.
  3. In a bowl, mix olive oil, vegetable stock, minced garlic, oregano, salt, pepper, and lemon juice.
  4. Pour the mixture over the potatoes and toss to coat evenly. Add the lemon slices on top.
  5. Bake for 45 minutes or until potatoes are tender, stirring halfway through. Garnish with parsley before serving.
