Ingredients
- 1 kg potatoes
- 60 ml olive oil
- 240 ml vegetable stock
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh lemon juice
- 1 lemon, sliced
- Fresh parsley for garnish
Method
- Preheat your oven to 200°C (400°F).
- Peel and cut the potatoes into wedges, then place them in a large baking dish.
- In a bowl, mix olive oil, vegetable stock, minced garlic, oregano, salt, pepper, and lemon juice.
- Pour the mixture over the potatoes and toss to coat evenly. Add the lemon slices on top.
- Bake for 45 minutes or until potatoes are tender, stirring halfway through. Garnish with parsley before serving.
