Ingredients
– 1 large cucumber, diced

– 200 g feta cheese, crumbled
– 100 g black olives, pitted
– 60 ml olive oil
– 30 ml red wine vinegar
– 1 tsp dried oregano
– Salt and pepper to taste
Method
1. Start by preparing the vegetables. Dice the cucumber and tomatoes, chop the bell pepper, and slice the red onion.
2. Place all the chopped veggies into a large mixing bowl. Add the crumbled feta cheese and black olives.
3. In a separate small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
4. Pour the dressing over the salad, mixing gently to combine everything.
5. Serve immediately, or let it chill in the fridge for a bit before enjoying.
