Ingredients
2 cups dried chickpeas
1 medium onion, chopped
2 cloves garlic, minced
1 cup fresh parsley, chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil
Juice of 1 lemon
Method
1. Soak the chickpeas in water overnight to soften them. Drain and rinse before cooking.
2. Place chickpeas in a pot and cover with fresh water. Bring to a boil, then simmer until tender for about 1 to 2 hours.
3. In a skillet, heat olive oil over medium heat. Add chopped onion and cook until golden, about 5 minutes.
4. Stir in garlic, cumin, oregano, salt, and pepper. Cook for another minute, then remove skillet from heat.
5. Combine the cooked chickpeas, onion mixture, parsley, and lemon juice in a bowl. Mix well before serving.
