Ingredients
– 1 cup dried white beans
– 1 medium onion, chopped
– 2 carrots, diced
– 2 celery stalks, diced
– 3 garlic cloves, minced
– 400 g canned diced tomatoes
– 1 tablespoon tomato paste
– 1 teaspoon dried oregano
– 1 tablespoon olive oil
– 4 cups vegetable broth
Method
1. Start by soaking the dried beans in water overnight.
2. Drain and rinse the beans, then boil them in a pot of water for about 30 minutes.
3. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook for 5 minutes or until they soften.
4. Stir in garlic, tomatoes, tomato paste, oregano, and the cooked beans. Pour in vegetable broth and let this simmer for 20 minutes.
5. Taste the soup and add salt and pepper as desired. Serve warm.
