Ingredients

– 500g chicken breast
– 2 tbsp olive oil
– 2 tsp dried oregano
– 1 tsp garlic powder
– 1 tsp salt
– 1 tsp black pepper
– 250g cherry tomatoes
– 1 cucumber
– 100g feta cheese
– 150g quinoa

Method

1. Start by cooking the quinoa. In a pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until fluffy.
2. While quinoa cooks, prepare the chicken. Cut the chicken breast into bite-sized pieces. In a bowl, mix olive oil, oregano, garlic powder, salt, and black pepper. Add the chicken and coat evenly.
3. Heat a pan over medium-high heat. Add the seasoned chicken and cook for about 6-8 minutes or until golden and cooked through.
4. Chop the cucumber and halve the cherry tomatoes. In a bowl, combine these with the cooked quinoa and cooked chicken.
5. Crumble the feta cheese on top just before serving. Toss everything together lightly to mix.
