Delicious Golden Beet Salad Recipe: Fresh, Nutritious & Easy

Ingredients

– 4 medium golden beets
– 1 tablespoon olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cups baby spinach
– 1/4 cup nuts (such as walnuts or almonds)
– 1/4 cup feta cheese, crumbled
– 2 tablespoons balsamic vinegar
– 1 teaspoon honey
– 1/4 cup chopped fresh herbs (like parsley or basil)

Method

1. Preheat your oven to 200°C. Wrap each beet in foil and place them on a baking tray. Roast for about 45 minutes or until tender.
2. Allow the beets to cool. Once they’re cool enough to handle, peel off the skin and chop them into small pieces.
3. In a large bowl, mix together olive oil, salt, black pepper, balsamic vinegar, and honey to create the dressing.
4. Add chopped beets and baby spinach into the bowl. Toss everything gently to combine well.
5. Serve the salad in bowls and sprinkle nuts, feta cheese, and fresh herbs on top.
