Ingredients
– 2 cups mixed vegetables (such as carrots, beans, and peas)

– 2 tomatoes, chopped

– 1 cup coconut milk

Method
1. Heat oil in a large pan over medium heat.
2. Add mustard seeds and wait until they start to pop.
3. Stir in the chopped onion and cook until soft.
4. Add the ginger-garlic paste, chopped tomatoes, and mixed vegetables. Cook for about 5 minutes.
5. Mix in turmeric and cumin powders along with coconut milk. Simmer for 10 minutes and season with salt.
