Delicious Goan Tonak Alsanyache: Black-Eyed Beans Recipe

Ingredients
1 cup black-eyed beans
2 cups water
1 tablespoon oil
1 onion, chopped
1 tablespoon ginger-garlic paste
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 tablespoon coriander powder
1 cup coconut milk
Salt to taste

Method
1. Rinse the black-eyed beans under cold water. Soak them in fresh water for at least 4 hours or overnight.
2. Drain the soaked beans and place them in a pot. Add 2 cups of water and cook on medium heat until they are tender. This should take about 30 minutes.
3. Heat oil in a large pan. Add chopped onion and sauté until it turns golden brown. Stir in ginger-garlic paste and cook for a couple of minutes.
4. Sprinkle in red chili powder, turmeric powder, and coriander powder. Mix everything and cook for another 2 minutes.
5. Add the cooked beans along with coconut milk and salt. Simmer for about 10 minutes until well combined.
