Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- 1 can (400 g) diced tomatoes
- 750 ml vegetable broth
- 500 g gnocchi
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and diced carrots. Cook for about 5 minutes until soft.
3. Stir in the minced garlic and dried Italian herbs. Cook for 1 minute until fragrant.
4. Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce the heat.
5. Mix in the gnocchi and chopped spinach. Season with salt and pepper. Let simmer for 3-5 minutes until the gnocchi are cooked.
