Ingredients
– 500 g turkey mince
– 1 cup gluten-free breadcrumbs
– ½ cup carrot, grated
– ½ cup onion, finely chopped
– 2 cloves garlic, minced
– 2 large eggs
– ¼ cup tomato sauce
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried oregano
– Salt and pepper to taste
Method
1. Preheat the oven to 180°C. Grease a muffin tin or line it with muffin cases.
2. In a large bowl, mix together the turkey mince, gluten-free breadcrumbs, grated carrot, chopped onion, and minced garlic.
3. Add the eggs, tomato sauce, Worcestershire sauce, and dried oregano. Season with salt and pepper.
4. Combine all ingredients until thoroughly mixed. Scoop the mixture into the muffin tin, filling each cup about two-thirds full.
5. Bake in the preheated oven for 25-30 minutes, or until the meatloaf muffins are cooked through and golden brown on top.
