Ingredients
– 4 medium sweet potatoes
– 1 tsp cinnamon
– 1/2 cup maple syrup
– 1/3 cup almond milk
– 1/4 cup coconut oil (melted)
– 1/4 tsp salt
– 1 cup pecans (chopped)
– 1/2 cup gluten-free oats
– 1/4 cup coconut sugar
– 1/4 cup coconut flour
Method
1. Preheat the oven to 180°C.
2. Peel and cut the sweet potatoes into chunks. Boil them in water until soft, about 15 minutes.
3. Drain the potatoes and mash them in a large bowl. Add cinnamon, maple syrup, almond milk, melted coconut oil, and salt. Mix well.
4. In another bowl, combine pecans, oats, coconut sugar, and coconut flour. Stir until combined.
5. Spread the sweet potato mixture in a baking dish. Top with the pecan mixture. Bake for 25-30 minutes until golden.
