Ingredients

– 1 cup of pumpkin puree
– 2 eggs
– ½ cup of vegetable oil
– 1 cup of brown sugar
– 1 ½ cups of gluten-free flour
– 1 tsp of baking soda
– ½ tsp of salt
– 1 tsp of cinnamon
– ½ tsp of nutmeg
– ½ cup of walnuts (optional)

Method

1. Preheat your oven to 180°C (350°F) and grease a loaf pan.
2. In a large bowl, mix together the pumpkin puree, eggs, vegetable oil, and brown sugar until smooth.
3. Add the gluten-free flour, baking soda, salt, cinnamon, and nutmeg to the mixture. Stir until just combined.
4. If you like, stir in the walnuts for added crunch.
5. Pour the batter into the prepared loaf pan and bake for about 60 minutes. Check with a toothpick to see if it comes out clean.
