Delicious Gluten-Free Ginger Cookies: Easy Recipe & Tips

Ingredients

– 1 cup gluten-free flour
– 1/2 cup brown sugar
– 1/4 cup coconut oil
– 1/4 cup molasses
– 1 egg
– 1 tbsp ground ginger
– 1/2 tsp baking soda
– 1/2 tsp cinnamon
– 1/4 tsp salt
– 1/4 cup chopped crystallized ginger

Method

1. Preheat your oven to 180 degrees Celsius and line a baking tray with baking paper.
2. In a bowl, mix the flour, brown sugar, baking soda, cinnamon, ginger, and salt together.
3. Melt the coconut oil and then add it to the dry ingredients along with molasses and the egg. Stir until everything is well combined.
4. Fold in the chopped crystallized ginger. Use a spoon to scoop out small balls of dough and place them on the baking tray.
5. Bake for 10 to 12 minutes or until the edges are slightly golden. Allow cookies to cool before enjoying.
