Ingredients
- 2 ripe bananas
- 2 large eggs
- 250 ml milk
- 90 ml vegetable oil
- 1 tsp vanilla extract
- 200 g almond flour
- 60 g rolled oats
- 1 tsp baking powder
- 1/2 tsp salt
- 100 g honey or maple syrup
Method
- Preheat your oven to 180 degrees Celsius and line a muffin tray with paper cases.
- In a large bowl, mash the ripe bananas until smooth. Add the eggs, milk, vegetable oil, and vanilla extract. Mix well until combined.
- Stir in the almond flour, rolled oats, baking powder, salt, and honey or maple syrup until everything is well mixed.
- Fill the muffin cases about three-quarters full with the batter.
- Bake in the oven for 20 to 25 minutes or until a toothpick comes out clean when inserted in the centre.
