Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 250 ml milk
  • 90 ml vegetable oil
  • 1 tsp vanilla extract
  • 200 g almond flour
  • 60 g rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 100 g honey or maple syrup

Method

  1. Preheat your oven to 180 degrees Celsius and line a muffin tray with paper cases.
  2. In a large bowl, mash the ripe bananas until smooth. Add the eggs, milk, vegetable oil, and vanilla extract. Mix well until combined.
  3. Stir in the almond flour, rolled oats, baking powder, salt, and honey or maple syrup until everything is well mixed.
  4. Fill the muffin cases about three-quarters full with the batter.
  5. Bake in the oven for 20 to 25 minutes or until a toothpick comes out clean when inserted in the centre.
