Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda

– 1/2 cup unsalted butter, softened
– 3/4 cup brown sugar
– 1/2 cup molasses
– 1 egg
Method
1. Preheat the oven to 180°C. Line two baking trays with baking paper.
2. In a bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, and salt.
3. In another bowl, beat the butter and brown sugar together until creamy. Add the molasses and egg, mixing until smooth.
4. Gradually add the dry ingredients to the wet mixture. Stir until well combined.
5. Scoop tablespoonfuls of dough onto the prepared trays, leaving space between them. Bake for about 10-12 minutes or until the edges are firm.
