Ingredients
– 500g of pumpkin, chopped
– 1 medium onion, diced
– 2 cloves of garlic, minced
– 1 cup of coconut milk
– 1 cup of water
– 2 tablespoons of fish sauce
– 1 tablespoon of sugar
– 1 tablespoon of cooking oil
– 1 red chili, sliced (optional)
– Salt to taste
Method
1. Heat the cooking oil in a pot over medium heat.
2. Add the diced onion and minced garlic. Cook until soft and fragrant.
3. Stir in the chopped pumpkin and let it cook for about 5 minutes.
4. Pour in the coconut milk and water. Add fish sauce, sugar, and salt. Mix everything together.
5. Simmer until the pumpkin is tender, about 15 minutes. If desired, add sliced red chili for spice.
