Ingredients

– 1 small butternut squash, peeled and diced
– 400 ml coconut milk
– 1 cup water
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon vegetable oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon fish sauce (optional)
– 2 cups spinach or other leafy greens

Method

1. Heat vegetable oil in a large pot over medium heat.
2. Sauté chopped onion and minced garlic until they become soft and fragrant.
3. Add diced butternut squash, salt, and pepper. Stir and cook for about 5 minutes.
4. Pour in coconut milk and water. Bring the mixture to a boil, then reduce heat and simmer until the squash is tender.
5. Once the squash is cooked, add spinach and fish sauce if using. Cook for a few more minutes until the greens are wilted.
