Delicious Gigante Beans Recipe: Hearty And Wholesome Dish Ideas

Ingredients

– 1 cup gigante beans (dried)
– 1 tablespoon olive oil
– 1 onion (chopped)
– 2 garlic cloves (minced)
– 1 can (400g) diced tomatoes
– 1 teaspoon smoked paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup vegetable broth
– Fresh parsley (for garnish)

Method

1. First, soak the gigante beans in plenty of water overnight.
2. Drain the beans and place them in a large pot. Add fresh water, then bring to a boil. Cook for about 30 minutes or until tender.
3. In a separate skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until soft.
4. Stir in diced tomatoes, smoked paprika, salt, and black pepper. Let this cook for about 5 minutes to blend the flavors.
5. Add the cooked beans and vegetable broth to the skillet. Simmer for 20 minutes. Serve hot, garnished with parsley.
