Ingredients
– 250 g cluster beans (also called gawar phali), chopped
– 1 cup fresh fenugreek leaves, chopped
– 1 tablespoon oil
– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds
– 1 teaspoon turmeric powder
– 1 teaspoon coriander powder
– 1 teaspoon red chili powder
– Salt, to taste
– 1 tablespoon lemon juice
Method
1. Heat the oil in a pan over medium heat. Add cumin seeds and mustard seeds, frying until they start to pop.
2. Stir in turmeric powder, coriander powder, and red chili powder. Cook the spices for about 30 seconds to release their flavors.
3. Add the chopped cluster beans and salt, mixing well. Cover the pan and allow them to cook for around 10 minutes.
4. Once the beans are tender, stir in the fenugreek leaves. Cook for an additional 5 minutes to combine the flavors.
5. Drizzle lemon juice over the top before serving as a side dish or a main course.
