Ingredients
– 2 cups cooked rice
– 2 tablespoons vegetable oil
– 4 cloves garlic, minced
– 2 spring onions, chopped
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– 1 teaspoon salt
– 1 teaspoon pepper
– 2 eggs, beaten
– Optional: fresh coriander for garnish
Method
1. Heat the vegetable oil in a large frying pan over medium heat.
2. Add the minced garlic. Cook until fragrant, which should take about 30 seconds.
3. Stir in the cooked rice, soy sauce, salt, and pepper. Mix everything together and fry for about 3 minutes.
4. Push the rice to one side of the pan and pour in the beaten eggs. Scramble the eggs until they are fully cooked, then mix them into the rice.
5. Finish by adding the chopped spring onions and sesame oil. Stir everything well and serve hot.
