Ingredients
– 2 tbsp olive oil
– 1 onion, chopped
– 3 garlic cloves, minced
– 1 carrot, grated
– 1 zucchini, chopped
– 1 red bell pepper, chopped
– 1 can (400 g) diced tomatoes
– 1 tsp dried oregano
– 1 tsp salt
– 1/2 tsp black pepper
Method
1. Heat olive oil in a large pan over medium heat.
2. Add the onion and cook for 3-5 minutes until soft.
3. Stir in garlic, carrot, zucchini, and bell pepper. Cook for another 5-7 minutes.
4. Add the canned tomatoes, oregano, salt, and pepper. Stir well until everything is combined.
5. Let it simmer for 15-20 minutes, stirring occasionally until thickened.
