Ingredients
- 500 g self-raising flour
- 1 tsp baking soda
- 1 tsp salt
- 300 ml buttermilk
- 100 g mixed dried fruit
- 50 g sugar
- 1 egg, lightly beaten
- 1 tbsp butter, melted
- Extra flour for dusting
Method
- Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a big mixing bowl, combine flour, baking soda, and salt thoroughly.
- Add the dried fruit and sugar, mixing them well into the dry ingredients.
- Pour in the buttermilk and beaten egg, then stir until a sticky dough forms.
- Transfer the dough to the floured surface. Shape it into a round loaf and place it on the baking tray. Brush with melted butter before baking for 30 minutes.
