Ingredients
– 2 cups dried white beans
– 1 large onion, sliced
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 500 ml vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon salt
– ½ teaspoon pepper
– 2 tablespoons balsamic vinegar
– 1 tablespoon fresh parsley, chopped
Method
1. Start by soaking the beans overnight in water. Rinse them the next day and drain well.
2. Heat olive oil in a large pot over medium heat. Add the sliced onion and cook until they become soft and golden brown, about 10-15 minutes.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Add the soaked beans, vegetable broth, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour or until the beans are tender.
5. Once cooked, stir in balsamic vinegar and sprinkle with chopped parsley before serving.
