Ingredients

– 1 cup of mixed dried fruit
– 2 teaspoons of brandy or orange juice

– 2 large eggs

– 1 cup of ground almonds

– 1 package of pre-made pastry dough
– Icing sugar for dusting

Method

1. Begin by soaking the mixed dried fruit in brandy or orange juice for about 30 minutes.
2. Preheat the oven to 190°C (375°F). Line a muffin tray with the pastry dough.
3. In a mixing bowl, cream the softened butter and sugar together until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition. Stir in the almond extract, ground almonds, and flour.
5. Fill each pastry shell with the mixture and bake for 20 minutes or until golden brown. Allow to cool before dusting with icing sugar.
