Ingredients
– 1 cup of uncooked rice
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 bell pepper, diced
– 400 ml of diced tomatoes
– 1 teaspoon of paprika
– 1 can (400 ml) of black beans, drained
– 1 cup of corn
– 1 cup of shredded cheese
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until soft, about 5 minutes.
3. Stir in the diced bell pepper and cook for another 2-3 minutes.
4. Pour in the rice, canned tomatoes, paprika, black beans, and corn. Stir well and bring to a boil.
5. Reduce the heat, cover the pot, and let it simmer for about 20 minutes. Remove from heat and top with shredded cheese.
