Method
1. Start by cooking the quinoa according to the package instructions. Let it cool when finished.
2. In a large bowl, mix the cooked quinoa, chicken, cubed pumpkin, and salad greens.
3. Add the dried cranberries, feta cheese, walnuts, salt, and pepper to the bowl.
4. Drizzle the balsamic vinaigrette over the mixture and stir until everything is combined.
5. Pack the salad into mason jars or serve immediately.
