Ingredients

– 2 cups all-purpose flour
– 1 tablespoon baking powder
– 1/4 cup sugar
– 1/2 teaspoon salt
– 1/4 cup unsalted butter, cold and cubed
– 3/4 cup milk
– 1 large egg
– 1 teaspoon vanilla extract
– Extra flour for dusting
– Jam and cream for serving

Method

1. Preheat your oven to 220°C (425°F). Line a baking tray with parchment paper.
2. In a large bowl, mix together the flour, baking powder, sugar, and salt.
3. Add the cold butter to the flour mixture. Use your fingers to rub the butter in until it resembles coarse crumbs.
4. In another bowl, whisk the milk, egg, and vanilla. Pour this mixture into the dry ingredients. Stir until just combined.
5. Turn the dough onto a floured surface and gently knead. Roll it out to about 2.5 cm thick. Cut into rounds and place on the prepared tray. Bake for 12-15 minutes until golden.
