Ingredients
200 g pumpkin puree
200 g plain flour
150 g brown sugar
100 g granulated sugar
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp nutmeg
1/4 tsp salt
120 ml vegetable oil
1/4 cup sugar (for rolling)
Method
Preheat your oven to 180°C. Line a baking tray with parchment paper.
In a large bowl, mix pumpkin puree, brown sugar, and granulated sugar until smooth.
Add vegetable oil, baking soda, ground cinnamon, nutmeg, and salt to the mixture. Stir until everything is well combined.
Gradually fold in the plain flour, mixing gently until the dough forms.
Scoop tablespoons of dough, roll into balls, and coat in sugar. Place them on the prepared baking tray, spaced apart, then bake for 10-12 minutes.
