Ingredients

– 250 g (2 ½ cups) crushed graham crackers
– 100 g (½ cup) melted butter
– 400 g (1 ½ cups) pumpkin puree
– 200 g (1 cup) cream cheese, softened
– 150 g (¾ cup) brown sugar
– 50 g (¼ cup) plain flour
– 1 tsp vanilla extract
– 1 tsp cinnamon
– ½ tsp nutmeg
– ½ tsp baking soda

Method

1. Preheat your oven to 175°C (350°F). Line a baking tray with baking paper.
2. In a bowl, mix the crushed graham crackers and melted butter until combined. Press this mixture into the baking tray to form a crust.
3. In a separate bowl, beat the pumpkin puree, cream cheese, brown sugar, flour, vanilla, cinnamon, nutmeg, and baking soda until smooth.
4. Pour the pumpkin mixture over the crust in the baking tray. Use a spatula to spread it evenly.
5. Bake for 30-35 minutes or until set. Let cool completely before cutting into squares.
