Ingredients
1 cup pumpkin puree
1 cup brown sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup chocolate chips
Method
Preheat the oven to 180°C and line a baking tray with parchment paper.
In a large bowl, mix the pumpkin puree, brown sugar, softened butter, and vanilla extract until smooth.
Combine the flour, baking powder, baking soda, ground cinnamon, and salt in a separate bowl. Gradually stir this dry mixture into the wet ingredients.
Fold in the chocolate chips gently until evenly distributed.
Scoop tablespoons of dough onto the prepared tray and bake for 10 to 12 minutes or until slightly golden.
