Delicious Eggless Pumpkin Bars Recipe For Fall Baking Fun

Ingredients
1 ½ cups pumpkin puree
1 cup brown sugar
½ cup vegetable oil
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped walnuts (optional)

Method
Preheat the oven to 175°C (350°F). Grease a baking dish or line it with parchment paper.
In a large bowl, mix together pumpkin puree, brown sugar, vegetable oil, and vanilla extract until smooth.
In another bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry mixture to the pumpkin mixture, stirring until just combined.
Fold in walnuts if using. Pour the batter into the prepared baking dish and spread it evenly.
Bake for 25 to 30 minutes or until a toothpick inserted in the centre comes out clean.
