Ingredients
1 cup rolled oats
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup brown sugar, packed
1/4 cup white sugar
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
3/4 cup raisins
1/2 cup chopped nuts (optional)
Method
Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
In a large bowl, mix together the oats, flour, baking soda, and salt.
In another bowl, combine the melted butter, brown sugar, white sugar, and vanilla.
Add the dry ingredients into the wet mixture. Stir until combined. Then fold in the raisins and nuts, if using.
Scoop tablespoons of dough onto the baking sheet, space them about 5 cm apart. Bake for 10 to 12 minutes or until the edges are golden.
