Ingredients
– 1 cup all-purpose flour
– 1 cup quick oats
– 1/2 cup brown sugar
– 1/2 cup white sugar
– 1/2 cup unsalted butter, softened
– 1 tsp vanilla extract
– 1/2 tsp baking soda
– 1/4 tsp salt
– 1 cup powdered sugar
– 3 tbsp milk
Method
1. Preheat the oven to 180°C and line a baking tray with parchment paper.
2. In a bowl, mix together flour, quick oats, brown sugar, white sugar, baking soda, and salt.
3. Add softened butter and vanilla to the dry mixture. Stir until a dough forms.
4. Scoop out small balls of dough and place them onto the prepared baking tray. Leave space between each ball.
5. Bake for about 10-12 minutes or until lightly golden. Let cool before spreading powdered sugar and milk mixture between two cookies to make sandwiches.
