Method
- In a large bowl, cream the softened butter with the sugars until light and fluffy.
- Add the vanilla extract. Mix well to combine.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture. Stir until a dough forms.
- Fold in the chopped pistachios and chocolate chips. Roll the dough into a log, wrap in plastic, and chill for at least one hour before slicing.
