Ingredients

– 2 cups cooked rice
Method
1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until it becomes soft.
2. Stir in the minced garlic and curry powder. Cook for another minute until fragrant.
3. Pour in the diced tomatoes and coconut milk. Mix everything together.
4. Add the mixed vegetables, salt, and pepper. Let it simmer for about 15 minutes, stirring occasionally.
5. Serve the curry over the cooked rice.
