Ingredients
– 3 ripe bananas
– 1 cup peanut butter
– 1 cup plant-based milk
– 1 cup sugar
– 1 tsp vanilla extract
– 2 cups flour
– 1 tsp baking soda
– 1/2 tsp salt
– 1 cup chocolate chips (optional)
Method
1. Preheat your oven to 180°C. Prepare a muffin tin with paper liners.
2. In a large bowl, mash the ripe bananas using a fork until smooth. Add the peanut butter, plant-based milk, sugar, and vanilla extract. Mix until well combined.
3. In another bowl, combine the flour, baking soda, and salt. Gradually add the dry mixture to the banana mixture, stirring until just combined. If desired, fold in chocolate chips.
4. Spoon the batter into the prepared muffin tin, filling each liner about two-thirds full.
5. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before serving.
