Easy Cuban Style Black Beans
Ingredients
1 can black beans (400g), drained and rinsed
1 cup onion, diced
1 cup green bell pepper, diced
3 cloves garlic, minced
1 tsp cumin
1 tsp oregano
1/4 cup fresh cilantro, chopped
1 cup vegetable broth
Salt and pepper to taste
1 tbsp olive oil
Method
Heat olive oil in a large pot over medium heat.
Add onion and green bell pepper, cooking until soft.
Stir in garlic, cumin, and oregano for about 1 minute.
Mix in black beans, vegetable broth, and cilantro.
Cook for 10-15 minutes, seasoning with salt and pepper as needed.
